“Cheese is the intersection of art, food, history and agriculture.  It’s so compelling.  Because it ends up as a cool, little 3D sculpture you can eat.  My best days are when I get to taste the cheese…cutting it open to reveal the big secret within. I’m happiest when the cheese really surprises me.”
